My Easter Meal. Holidays to me are times I like to cook beyond what I would normally get to eat. I like to cook a main meat and tons of side dishes and veggies. Any other day I go for the quick and yummy meals, but I don’t mind spending more time in the kitchen for a Holiday and making a delicious meal. Here is the meal I plan on cooking for Easter. Beef Wellington for 2:
I found the recipe above while scrolling for meal ideas for Easter and I’m using it as a base of what to do. I have only had Beef Wellington a couple of times in life but I remember it being so delicious. I decided to give it a go and why not try to make it myself. Basically, I’m using Easter as an excuse for it because no way is this something I could cook often. The cost is offset a bit for me as well because I no longer cook for 5+ people I only cook for 2 now so I won’t need to buy large amounts of ingredients.
Green Bean Casserole:
This is my go-to holiday side dish no matter what holiday. It’s a classic and yummy and so easy to prep and bake. Note: I use Worcestershire sauce instead of soy like most recipes call for. If you want to get real fancy you can add a can of artichoke hearts (very well drained).
Roasted Brussels Sprouts :
I love brussels sprouts and always looking for new ways to cook and season them. Above is a new recipe I found that looks really tasty and won’t take much effort to make which is good since I think the Wellington will be a lot of prep to put together.
Roasted Carrots:
This is a great time of year to get some tasty carrots and I love roasted carrots the best. Plus it adds a nice splash of color on the plate being the other sides are green.
Homemade Mashed Potatoes:
With lots and lots of butter, this is a good recipe to go by if you haven’t made this before. I don’t need so much mashed so I will be cutting this in half.
I like to have some sort of salad, and I’m thinking of making one out of; Baby Spinach, walnuts, roasted beets, and gorgonzola cheese with a balsamic vinaigrette. This isn’t set in stone like my meal idea is but it sounds good to me and I feel like it would blend well taste wise with the rest of the meal.
As far as dessert is concerned, I will probably just get some ice cream or some other frozen dessert. Can I bake? Sorta. But, I will be spending enough time on the meal and to me the meal is more important then the dessert. Although, I am trying to get better at baking a Holiday meal is not the time for that, so store bought something it will be.

Holidays are a bitter sweet thing for me. I miss the family I used to have to celebrate with, but still having my dad is a blessing to me and sharing a nice meal we really enjoy is the cherry on top and I cherish it. Happy Easter to all.
